Publishers will publish books that they think will sell. Blame the book buying public for the state of books.
References :
It's because publishers go for books that have a greater potential to sell, nevermind if the story is predictable.

You see, traditional publishing is still a business. No matter how they say that the beauty of traditional publishing is that they pay to get your book published and not the other way around, they will not invest in your work if they think they cannot get a return on it anyway.
References :
http://selfpublishingjourney.wordpress.com/

I have to respond here with a quote:
'The end of the world is nigh, everyone wants to write books, children do not obey there parents anymore .....'
It is from a stone Inscription by an Egyptian priest 2000 years BC, so ca 4000 years ago.
So I think you are simply observing that there is books for the masses and then there is literature.
If you stick to the latter you will have much more fun. I certainly do.
I am on goodreads.com, where I have a shelf of ca 600 books read and 400 books to read and the list is getting longer every week. No Dan Brown or Twilight in it though.
References :
Because publishers KNOW there is a market for such books.

They will offer a variety so everyone gets what they like.

Yes, we wince when we see a title like "The Greek Billioniare's Secret Baby's Mistress has PMS" --but there are tens of thousands of people buying such titles.

That's a nice chunk of money in today's market. They will always go for the money.

Yes, we adore a wonderful feast prepared by Wolfgang Puck.

But sometimes you just get to jonesing for a greasy, bad-for-your heart Big Mac and fries.

Just think of the bad stuff as fast food. Feast when you can, though, and let others pick what they like.
References :
It is a matter of audience, and the lack of quality in the audience these days is a constant and unpleasant surprise to publishers as well. Many, many aspiring authors are on long waiting lists by publishers to be published, as the quality readers are limited.

In the 1980's two things happened, the big box book sellers appeared on the screen to replace the loved corner book store. This brought books to people who had not been book buyers before. These folks just love to read the book written by the illliterate actress or apologist musician who can't tell you enough lies about themselves as they went from birth to age twelve as a gift to the world.

The second thing that happened was a book called, "The bridges of Madison County." It is the worst book ever written and it is undisguised male fantasy combined with ego and insipid stupidity of the lowest common denomentor. A newspaper at the time compared its writing to a cloting catalogue, and the clothing catalogue was better written. Every publisher turned down the book, so the author self-published it originally. Sadly, it became the biggest selling book of the decade. It got picked up eventually by Little Brown on a reprint.

So, the publishers learned and now make bigger profits from the illiterate and the dense and those of little ability to even understand what they are reading. The good books are still out there, they just rarely make a best seller list. Keep looking!
